Wednesday: Too many tacos

Today's plan was fish tacos.  Technically that was also yesterday's plan, but it got delayed.  Here is a poorly constructed mosaic image of the ingredients I used for today's tacos:


  • (off camera) Cheater Mexican rice: 1/3c rice, 1/2c chicken stock, three spoonfuls salsa.  Mine came out a little soupy, but that's probably because the salsa was a bit watery.
  • Tortillas.
  • Some lettuce, sliced into large sheets (not shreds), and dried super well so that they don't soggy up everything.
  • A tomato, sliced into moons, with the seeds and core removed.  Also shaken dry so that the taco stays dry.
  • Some avacado slices.
  • Like a quarter of an onion, thinly sliced, and then cooked in the frying pan before the fish was added.
  • Cheese.
  • A nice quarter pound mahi-mahi filet, sprinkled with the taco seasoning, pan fried, chopped roughly about 3/4 of the way cooked, and then seared on the inside chop sides.
The results: 


This was way too big, and had way too much stuff crammed into it.  It was super tasty, but it was hard to get good bites that had everything in it.  I added a bit more salsa as well, as my goal of keeping the veggies from adding soggies worked against me a bit.

Tomorrow will be basically the same thing, but using salmon.  I'm thinking about ways to change up the tacos for friday, though.

It is winter someplace today. That someplace probably has squirrels, too.
