Panzanella

The ingredients for panzanella (using my recipe from last time):
 First step is to cube the bread, and then toss with olive oil and some of the garlic paste (I was lazy, and didn't feel like mincing garlic).
 Spread it out on a baking sheet, and bake at 400 for 8 minutes:
Once the bread is in the oven, make the dressing.  Olive oil, balsamic vinegar, a dash of tomato paste, salt, pepper, some dried basil because the fresh basil at WF looked like crap today:
 Dice up the tomatoes, and add some thinly sliced cippolini onion:
Add the bread to the bowl when it's done en-crouton-ifying:
Let it sit for a few minutes, plate, and add some mozzarella chunks and a few slices of prosciutto (or speck, if that's what you decided to get at the store instead):
