Monday: marinating

The fish was good again today, and the marinade completely soaked through the thinner parts of the filet, and so the flavor was suitably increased.  This did an excellent job of bringing the pepper flake spice to the front.  It was a bit light yesterday, so if I make this in the future, I'll probably tune the spice better depending on how long it will marinate.

I'm kind of looking forward to the saltimbocca for tomorrow.  I think part of that is so the prosciutto will be used, and I won't be constantly tempted to cram it all in my mouth.
